Thursdays are the day for the chicken fried steak special — build a lunch or dinner around it. If you're going for the first time, make it a Thursday and figure out the rest of the menu on your next visit. Regulars already know.

KOKORO
Order: A5 Nigiri.
Yes, the headline pick at a sushi restaurant is beef. A5 wagyu nigiri — small, indulgent, and frankly out of control. It reads strange on paper and makes complete sense on the first bite. Most sushi around The Woodlands lands somewhere between "very good" and "reliable." Kokoro's A5 is the one bite around here that's genuinely in a different tier.

BELLY OF THE BEAST
Order: Whatever's on the menu this week.
Thomas Bille and his wife Liz run Belly of the Beast — he's a James Beard Award-winning chef, and it shows. The menu is seasonal, ingredient-driven, and different every visit — so the "order this" advice doesn't apply. What you can count on is that whatever's listed will be considered, and there'll be at least one dish you're still thinking about the next day. Go with an open mind and pay attention.

CHARM TAPHOUSE AND BBQ
Order: Brisket Fried Rice.
The team behind Charm Taphouse and BBQ also runs Charm Thai — where they long ago proved they know Thai food inside out. Now they're running a Texas BBQ concept, and they've got the chops for that too. The brisket fried rice is where both skills come together: real Texas brisket, real Thai fried rice technique. It's one of the best cross-cuisine plates in The Woodlands right now. Get it once and see what I mean.
